In honor of PI day here is a healthy pumpkin pie- 21 day fix approved
Ingredients:
* 1 green container canned pure pumpkin
* 1 egg, beaten
* 1 tsp pumpkin pie spice
* Optional stevia for sweetner- I use about a 1/4 tsp
Instructions:
* Mix all ingredients in bowl.
* Spray 16 oz ramekin with coconut oil.
* Pour mixture into ramekin.
* Microwave for 5 minutes or until top of "pie" is no longer wet.
Serve.
Can add toppings like: pecans
Or walnuts, honey, maple syrup
1 green
1/2 red
Optional 1/2 blue (nuts)
